Wild Rice Hot Dish

A hearty and comforting wild rice hot dish, perfect for a family dinner. This recipe combines ground beef, rice, and vegetables, all baked together for a flavorful and satisfying meal for those chilly Midwest winter nights.

Ingredients:
2 lbs ground beef,
½ cups Spanish onion (chopped)
2 cups chopped celery
2 cups chopped green pepper
Salt & pepper to taste
1 cup wild or white rice
1 can cream of chicken rice soup
2 cans cream of mushroom soup
1 can button mushrooms (substitute fresh if desired. Wash thoroughly and rough chop)
Almonds browned in butter (optional)

Instructions:

  1. If using wild rice, soak overnight and drain when ready to start cooking dinner. If using white rice, skip this step.

  2. Preheat oven to 300°F.

  3. Brown the ground beef, onion, celery, and green pepper together; drain excess fat.

  4. Combine the soaked rice with the meat mixture and soups.

  5. Place in a covered casserole and bake at 300°F for 2 hours.

  6. Serve topped with almonds browned in butter (optional). To prepare, roughly chop 1 cup of almonds and cook over medium heat in 1 tbsp. of butter until lightly browned.

Notes:
Spanish onion here just means a yellow onion. Grandma Roma wasn’t picky though - whatever onion is on sale will do just fine.
