Layered Enchilada Pie
This layered enchilada pie is a delicious and easy-to-make Mexican-inspired dish. Layers of tortillas, seasoned meat, and cheese create a flavorful and satisfying meal.
Ingredients:
1 lb ground beef
1 chopped onion
1 can (8 oz) tomato sauce
6 tortillas (spread with butter)
2 tsp salt
1 can (4 oz) chopped ripe olives
1½ cups grated sharp cheddar cheese
¼ tsp pepper
1 tbsp chili powder
1 cup water
Instructions:
Preheat oven to 400°F.
Brown the ground beef and onion; drain excess fat.
Add the tomato sauce, salt, pepper, chili powder, and water to the meat. Mix well.
In a casserole dish, alternate layers of buttered tortillas, meat sauce, olives, and cheese until you run out of ingredients.
Bake in a 400°F oven for 20 minutes.
Cut into wedges to serve.
Notes:
Make it in one pot! Brown your beef and onions in a large cast iron skillet roughly the same diameter as your tortillas. When meat is cooked, set aside in a bowl, then use your cast iron skillet to build the layered pie. Your cast iron can go right into the oven.
