Quick Chop Suey
A quick and easy chop suey recipe, perfect for a speedy dinner. This dish combines luncheon meat with fresh vegetables and a savory sauce, served over rice or noodles for a satisfying meal.
Ingredients:
1 (12 oz) can luncheon meat (such as Spam)
1 cup water
2 cups celery, diced
1 cup sliced onion
Salt and pepper to taste
1 Tbsp. cornstarch
¾ cup water
Sesame or vegetable oil for browning
Optional: Serve over rice or noodles and top with crispy chow mein noodles
Instructions:
Cut the luncheon meat into thin strips or bite-sized pieces.
Brown lightly in a small amount of fat, such as sesame or vegetable oil.
Add 1 cup water, celery, and onions.
Cover, simmer 15 minutes.
Season with salt and pepper to taste.
In a separate small bowl, blend cornstarch with ¾ cup water to form a slurry. Stir into hot mixture.
Cook until smooth and thick, stirring constantly.
Eat as is or serve over rice or noodles. Top with crispy chow mein noodles if desired.
Notes:
Substitute leftover meat like rotisserie chicken for the luncheon meat to use up your leftovers!
