Pork Chop Hot Dish
This classic Pork Chop Hot Dish is a hearty and comforting meal, perfect for those chilly evenings. It's a dish that brings back fond memories of Grandma Roma cooking pork chops in the countertop electric skillet. I always loved how warm and inviting the kitchen smelled when she made this hearty meal.
Ingredients:
2 pork chops (trim off fat)
1 cup cubed raw potatoes
2 raw carrots (sliced)
1 cup peas (canned, use juice)
1 cup celery (sliced)
1/2 cup diced onions
Salt and pepper to taste
Instructions:
Over medium high heat in a heavy bottomed pan, such as cast iron, sear pork chops.
In an oven safe baking dish, layer the cubed potatoes, sliced carrots, peas with juice, and sliced celery. Season with salt and pepper, if using.
Place the seared pork chops on top of the vegetables.
Sprinkle diced onions over the top.
Cover the dish with foil and bake at 375°F for 1 to 1½ hours, until the vegetables are tender and the pork chops are cooked through.
Notes:
The original recipe card does not include salt or pepper. If desired, salt your pork before searing. (We recommend seasoning your meat and vegetables!)
If you want to make this a one-pot meal, sear off the pork chops in a cast iron skillet, then build the dish in the same skillet. Tent it with foil and transfer to the oven for easy dinner and clean up!
