Cinnamon Rolls
There’s nothing more comforting than warm cinnamon rolls on a dreary Saturday morning. This cherished recipe brings back memories of cozy mornings and family gatherings. Each roll is a warm embrace, filled with the comforting flavors of cinnamon and sugar.
Ingredients:
1 cup lukewarm water
2 packages yeast
1 tsp sugar (for yeast)
1 cup scalded milk (cooled)
3 cups flour + 4 cups flour, separated
½ cup oleo (or butter, room temperature)
⅔ cup sugar
2 eggs
1 tsp lemon extract
½ tsp salt
For filling:
½ cup oleo (or butter, room temperature)
½ cup sugar
½ cup brown sugar
2 tsp. cinnamon
Instructions:
Combine 1 cup lukewarm water, 2 packages yeast, and 1 tsp sugar. Let stand for 10 minutes.
Add 1 cup scalded milk (cooled).
Beat in 3 cups flour. (It's better if this stands a while, so allow to sit on the counter, covered, for up to an hour).
Add the following to this mixture: ½ cup oleo (or butter), ⅔ cup sugar, 2 eggs, 1 tsp lemon extract, ½ tsp salt. The dough will be very wet.
Add 4 cups flour (more or less), and mix well.
Let rise until doubled in size.
Roll out dough to ½ inch thickness.
In separate bowl, combine ingredients for filling: ½ cup oleo (or butter, room temperature), ½ sugar, ½ brown sugar, and 2 tsp. cinnamon.
Spread with filling mixture.
Roll the dough into a log shape and cut into 1-inch slices.
Let rise until doubled and bake at 350°F for 15-20 minutes.
Optional: Add nuts or raisins for extra flavor. Brushing a little brown sugar and milk on top before baking is also a nice touch.
